Instructions

To prepare the Pan Seared Chilean Sea Bass:

  1. Dry the fish filets and season them with some freshly ground pepper and sea salt.
  2. Add olive oil or any suitable high-heat oil in a fry pan and wait until it's heated.
  3. Gently place the seasoned bass fillets skin side down in the pan and cook for about 5 minutes or so.
  4. Using a spatula or a tong, carefully flip the fillets and cook them for another two minutes so that the non-skin portions are cooked perfectly.
  5. Meanwhile, you can make the topping by chopping some cherry tomatoes and mixing them with some chopped garlic, chives, and diced olives.
  6. Once done, remove from the heat carefully keeping the crusted skin attached to the flesh without separating it. Then garnish with the prepared cherry tomato topping and assorted herbs.
